dell’Est is a small building, designed for storing, bottling and packaging
the extra virgin olive oil of the farm Le Cerque and of the other farms of
the Sabina who produce certified
(D.O.P. and/or organic) extravirgin olive oil. There
aren’t automatic machines or assembly lines but only stainless steel
containers, pneumatic pumps, pipes and simple manual tools operated by the
owner. The bottling facility is ergonomic and it conforms to the rules for
storing and packaging the organic or D.O.P. certified extra virgin olive
oils. When the plant is not operating, visiting
people are admitted and a small
group of guests can be introduced by the owner (a member of the Unione
Meditterranea Assaggiatori di Olio) on the tasting
technique of the virgin olive oils.
